Track limitation in PT HD – Card issue?

I made the switch from PT LE to HD1 (PCIE card) a few months ago. As most of you know, Pro tools LE 8 gives you 64 tracks, independently if they are stereo or mono.

just 1 mic for recording impromptu acoustic jams

Need something versatile, easily portable, don’t have to mess around with configuration / placement much. I’ll be operating a video camera at the same time, so the mic would either mount on the camera itself, or on a portable stand. I’m wary of trying to go stereo with a pair, because that would require fiddling with the alignment and loss of time and spontaneity
